Recipe For The Day

Tortilla Enchilada Soup

Two cans condensed chicken with rice soup
Two cans chicken broth (or 4 cups of water with 4 bouillon cubes)
3 ozs chicken (you can use a can of chicken, or just some leftover chicken, chopped or shredded)
1 Cup picante sauce or salsa
1 can red enchilada sauce

Combine all ingredients in a slow cooker and cook on low for about 4 hours.

Serve with tortilla chips, or put strips of fat free flour tortillas on top of each bowl of soup and also some shredded cheese.


Broccoli-Cheese Chicken

1 tablespoon butter
4 boneless, skinless chicken breasts
1 (10 oz) can broccoli-cheese soup
1 (10 oz) package frozen broccoli spears
1/3 cup milk

Heat butter in skillet, add chicken and cook 15 minutes or until brown on both sides.  Remove and set aside.
In same skillet, combine remaining ingredients and a little black pepper.  Heat to boiling.
Return chicken to skillet and reduce heat to low.  Cover and cook another 25 minutes until chicken is no longer pink and broccoli is tender. 

Serve over rice.


Crock Pot Barbecue

2 lbs. (approx.) pork tenderloin (1 package of two pieces, unseasoned)
1 regular sized bottle of your favorite barbecue sauce

Place tenderloin in crock pot. Pour bottle of sauce over. Cook on low for 8-10 hours. Using two forks, shred meat right in the pot (easy to do, because it is so well done). Serve on your favorite rolls, with your favorite sides like salad or coleslaw.
